Understanding the Icing: Find What Works for You
There are a ton of icing options to choose from when it comes to decorating cakes: from American and Swiss meringue buttercream, to ganaches, mousses, whipped chantilly, and more; each of these mediums has a unique texture and behaves differently depending on things like temperature and decorating tools.
Now, picking the right icing for your cake flavor could be a whole other post on its own, but for today, we’re focusing on tips to help you achieve that smooth, sharp-edged finish, no matter which icing you’re working with.
1. A Level Base is Your Friend
Creating sharp edges starts with a level base. Make sure all of your cake layers are the same size and are stacked evenly. You want to have a solid foundation so that when you apply your exterior icing, it doesn’t settle unevenly.
